Vzd\u011bl\u00e1val jsem se a zkoumal, jak\u00fd vliv m\u00e1 j\u00eddlo na na\u0161e zdrav\u00ed, ekologii, udr\u017eitelnost a celkovou budoucnost lidstva. S p\u00e1tr\u00e1n\u00edm po superpotravin\u00e1ch a jejich vyu\u017eit\u00ed jsem objevil tak\u00e9 kimchi. Shodou okolnost\u00ed jsem ho poprv\u00e9 ochutnal v japonsk\u00e9 restauraci a nakonec si ho zamiloval d\u00edky m\u00e9mu vietnamsk\u00e9mu kamar\u00e1dovi, kter\u00fd studoval v Koreji.<\/span><\/p>\n<\/div><figure class=\"wp-block-media-text__media\"><img decoding=\"async\" loading=\"lazy\" width=\"1191\" height=\"556\" src=\"https:\/\/www.zaslat.cz\/blog\/wp-content\/uploads\/2022\/02\/zivina-logo-black.png\" alt=\"\" class=\"wp-image-2962 size-full\"\/><\/figure><\/div>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>\u010c\u00edm je kimchi speci\u00e1ln\u00ed? Mohl bys popsat jeho chu\u0165?<\/strong><\/h4>\n\n\n\n<p><span style=\"font-weight: 400;\">Tento mix asijsk\u00fdch vliv\u016f vlastn\u011b vystihuje i to, co m\u011b na asijsk\u00e9 kuchyni bav\u00ed \u2013 kombinace r\u016fzn\u00fdch chut\u00ed, konzistenc\u00ed a textur v sob\u011b skr\u00fdv\u00e1 oh\u0148ostroj po\u017eitk\u016f a vjem\u016f. Kdybych m\u011bl vystihnout chu\u0165 kimchi jedn\u00edm slovem, \u0159ekl bych hravost. Na prvn\u00ed dobrou zaujme svou sv\u011b\u017e\u00ed kyselkavost\u00ed, p\u0159\u00edjemnou \u0161tiplavost\u00ed a sly\u0161itelnou k\u0159upavost\u00ed. Troufnu si \u0159\u00edct, \u017ee jsem ochutnal v\u0161echny druhy kimchi, kter\u00e9 na trhu najdete. Vlezl jsem do n\u011bkolika kuchyn\u00ed v restaurac\u00edch a ptal se na receptury, \u010detl slo\u017een\u00ed a nau\u010dil jsem ho j\u00edst moj\u00ed rodinu i kamar\u00e1dy.<\/span><\/p>\n\n\n\n<figure class=\"wp-block-table\"><table><tbody><tr><td><span style=\"color: #0088cc;\"><strong><em>\u201cCo je kimchi?\u201d<\/em><\/strong><\/span>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #0088cc;\"><em><span style=\"font-weight: 400;\">Kimchi je n\u00e1lo\u017e miner\u00e1l\u016f, vitam\u00edn\u016f, aminokyselin, flavonoidy a probiotik &#8211; jednodu\u0161e superpotravina. Chutn\u00fd zp\u016fsob, jak b\u00fdt zdrav\u00ed. Tradi\u010dn\u00ed kimchi je vyrobeno z pekingsk\u00e9ho zel\u00ed, b\u011b\u017en\u00e9 jsou ale i varianty z dal\u0161\u00edch druh\u016f zeleniny jako je \u0159edkev nebo jarn\u00ed cibulka. Fantazii se meze nekladou. Hlavn\u00ed je ale pro jeho specifickou chu\u0165 dochucen\u00ed sm\u011bs\u00ed ko\u0159en\u00ed, ve kter\u00e9 nechyb\u00ed korejsk\u00e9 chilli gochugaru a speci\u00e1ln\u00ed postupy macerov\u00e1n\u00ed ve slan\u00e9m n\u00e1levu, kter\u00e9 zajist\u00ed k\u0159upavost tohoto korejsk\u00e9ho zeln\u00e9ho sal\u00e1tu.<\/span><\/em><\/span><\/p>\n<\/td><\/tr><\/tbody><\/table><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>P\u0159esto, m\u016f\u017eu m\u00edt r\u00e1d \u0161pan\u011blskou \u0161unku, ale neza\u010dnu ji doma na balkon\u011b vyr\u00e1b\u011bt. Jak se z v\u00e1\u0161n\u011b stane podnik\u00e1n\u00ed?<\/strong><\/h4>\n\n\n\n<p><span style=\"font-weight: 400;\">Dlouho jsem se sna\u017eil vyladit k dokonalosti vlastn\u00ed recepturu na kimchi, a tak postupn\u011b vznikla <a href=\"https:\/\/www.zivina.cz\/\">\u017dIVINA<\/a>. V m\u00e9 hlav\u011b \u017eila u\u017e d\u00e1vno, jenom nem\u011bla konkr\u00e9tn\u00ed tvar. A\u017e m\u011b moje \u017eena Mark\u00e9ta musela popostr\u010dit t\u00edm spr\u00e1vn\u00fdm sm\u011brem. Spole\u010dn\u011b jsme se rozhodli prom\u011bnit na\u0161i z\u00e1vislost na kimchi a dal\u0161\u00edch potravin\u00e1ch pozitivn\u011b ovliv\u0148uj\u00edc\u00ed st\u0159evn\u00ed mikrobiom v n\u011bco, \u010d\u00edm m\u016f\u017eeme na\u0161i stravovac\u00ed filozofii posunout i na st\u016fl dal\u0161\u00edch lid\u00ed, z\u00e1kazn\u00edk\u016f.<\/span><\/p>\n\n\n\n<blockquote class=\"wp-block-quote\">\n<p class=\"has-text-align-left\"><b><span style=\"color: #0088cc;\">\u017divina je 20 let l\u00e1sky k j\u00eddlu.<\/span>&nbsp;<\/b><\/p>\n<\/blockquote>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Kde za\u010dala tvoje l\u00e1ska ke gastru? Bylo to nap\u0159\u00edklad v babi\u010d\u010din\u011b kuchyni, jak to \u010dasto b\u00fdv\u00e1?<\/strong><\/h4>\n\n\n\n<div class=\"wp-block-media-text alignwide has-media-on-the-right is-stacked-on-mobile\" style=\"grid-template-columns:auto 42%\"><div class=\"wp-block-media-text__content\">\n<p><span style=\"font-weight: 400;\">To, \u017ee dobr\u00e9 j\u00eddlo je z\u00e1klad v\u0161eho, jsem se nau\u010dil hlavn\u011b od m\u00e9 babi\u010dky. Od d\u011btstv\u00ed mi p\u0159ipom\u00ednala, \u017ee j\u00edst se m\u00e1 v\u0161e v rozumn\u00e9 m\u00ed\u0159e, \u017ee p\u0159id\u00e1vat ovoce a zeleninu do ka\u017edodenn\u00edho p\u0159\u00edjmu m\u00e1 smysl a \u017ee je strava stavebn\u00edm kamenem dobr\u00e9ho byt\u00ed. Jej\u00ed recept na dobr\u00fd \u017eivot evidentn\u011b funguje. Tento rok oslavila osmdes\u00e1tiny a je\u0161t\u011b p\u0159ed dv\u011bma lety jsme spolu sj\u00ed\u017ed\u011bli \u010dern\u00e9 sjezdovky v It\u00e1lii.<\/span><\/p>\n<\/div><figure class=\"wp-block-media-text__media\"><img decoding=\"async\" loading=\"lazy\" width=\"1000\" height=\"665\" src=\"https:\/\/www.zaslat.cz\/blog\/wp-content\/uploads\/2022\/02\/O-na\u0301s-1.png\" alt=\"\" class=\"wp-image-2961 size-full\"\/><\/figure><\/div>\n\n\n\n<p><span style=\"font-weight: 400;\">Aktu\u00e1ln\u011b l\u00edt\u00e1 s m\u00fdmi syny na h\u0159i\u0161ti nebo okop\u00e1v\u00e1 zahr\u00e1dku, ze kter\u00e9 skl\u00edz\u00ed ka\u017edoro\u010dn\u011b tolik zeleniny a ovoce, \u017ee je\u0161t\u011b na V\u00e1noce m\u00e1me pln\u00e9 mraz\u00e1ky. A kdy\u017e u\u017e si mysl\u00edme, \u017ee chv\u00edli odpo\u010d\u00edv\u00e1, tak chod\u00ed s telefonem v ruce po byt\u011b a d\u00e1v\u00e1 rady sv\u00fdm kamar\u00e1d\u016fm a rodin\u011b ohledn\u011b zdrav\u00ed a v\u00fd\u017eivy. Sp\u00ed\u0161 ne\u017e \u201eahoj\u201c od n\u00ed prvn\u00ed sly\u0161\u00edme: \u201eJedly d\u011bti? A spaly dob\u0159e?\u201c Jinak se ale moje gastro obzory roz\u0161\u00ed\u0159ily u\u017e v 10 letech p\u0159i cest\u011b s rodi\u010di do Kanady k na\u0161im zn\u00e1m\u00fdm, kte\u0159\u00ed n\u00e1s tam provedli vyhl\u00e1\u0161en\u00fdmi gastropodniky. U\u017e p\u0159ed dvaceti lety jsem ochutnal prvn\u00ed sushi, u\u010dil se j\u00edst humra a rozpoznat \u010derstv\u00e9 dary mo\u0159e od t\u011bch mra\u017een\u00fdch. Kanada a Havaj m\u00e9 chut\u011b rozmazlily natolik, \u017ee jsem po n\u00e1vratu u\u017e nikdy nevkro\u010dil do \u0161koln\u00ed j\u00eddelny a v\u00edce \u010dasu za\u010dal tr\u00e1vit doma v kuchyni.&nbsp;<\/span><\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Tak\u017ee jsi i amat\u00e9rsk\u00fd kucha\u0159?<\/strong><\/h4>\n\n\n\n<p><span style=\"font-weight: 400;\">P\u0159esn\u011b tak. Kucha\u0159 i gurm\u00e1n. Na\u0161e rodinn\u00e9 cestov\u00e1n\u00ed je spojeno v\u017edy se sportem a j\u00eddlem. M\u00e1 \u017eena a d\u011bti se dokonce odnau\u010dily \u0161ilhat hlady, proto\u017ee v\u011bd\u00ed, \u017ee naj\u00edt kvalitn\u00ed restauraci, kde se dozv\u00edme o p\u016fvodu potravin, se v\u017edy vyplat\u00ed. I doma va\u0159\u00edm j\u00e1 a sna\u017e\u00edm se v\u017edy v\u00e1\u017eit vyv\u00e1\u017eenou stravu, kter\u00e1 m\u00e1 smysl. Jak pro n\u00e1s, tak pro na\u0161e d\u011bti.<\/span><\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Co v\u0161e je v <a href=\"https:\/\/www.zivina.cz\/kimchi\/\">kimchi<\/a>?<\/strong><\/h4>\n\n\n\n<div class=\"wp-block-media-text alignwide is-stacked-on-mobile\" style=\"grid-template-columns:25% auto\"><figure class=\"wp-block-media-text__media\"><img decoding=\"async\" loading=\"lazy\" width=\"1000\" height=\"665\" src=\"https:\/\/www.zaslat.cz\/blog\/wp-content\/uploads\/2022\/02\/Kimchi-9.png\" alt=\"\" class=\"wp-image-2960 size-full\"\/><\/figure><div class=\"wp-block-media-text__content\">\n<p><span style=\"font-weight: 400;\">Je to rozmanit\u00fd sal\u00e1t z \u010d\u00ednsk\u00e9ho zel\u00ed, do kter\u00e9ho p\u0159id\u00e1v\u00e1me nap\u0159. fialovou mrkev, \u0159edkev, \u010desnek, z\u00e1zvor a dal\u0161\u00ed v\u00fdznamn\u00e9 suroviny. Vyr\u00e1b\u00edme t\u0159eba i fenyklovou verzi.&nbsp;Zakl\u00e1d\u00e1me si na ingredienc\u00edch a do kimchi p\u0159id\u00e1v\u00e1me jedny z nejlep\u0161\u00edch chilli vlo\u010dek Gochugaru a ryb\u00ed om\u00e1\u010dku, kter\u00e1 je sou\u010d\u00e1st\u00ed korejsk\u00e9ho kimchi, nahrazujeme s\u00f3jovou om\u00e1\u010dkou Kikkoman. <\/span><\/p>\n<\/div><\/div>\n\n\n\n<p><span style=\"font-weight: 400;\">T\u00edm je zcela rostlinn\u00e9. By\u0165 se to zd\u00e1 takhle na prvn\u00ed pohled jednoduch\u00e9, ud\u011blat v\u0161e spr\u00e1vn\u011b, je v\u011bda. Kimchi je nav\u00edc \u017eiv\u00fd sal\u00e1t, jakmile jej otev\u0159ete, pracuje d\u00e1l, kvas\u00ed, jeho chu\u0165 se m\u011bn\u00ed. N\u011bkdo ho m\u00e1 r\u00e1d \u010derstv\u00e9, n\u011bkdo prole\u017een\u011bj\u0161\u00ed a kyselkav\u011bj\u0161\u00ed. Aktu\u00e1ln\u011b pracujeme na n\u011bjak\u00e9 stupnici, kterou bychom mohli lidem je\u0161t\u011b l\u00e9pe pomoci vybrat kimchi p\u0159esn\u011b podle jejich chuti.<\/span><\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Je kimchi zdrav\u00e9?<\/strong><\/h4>\n\n\n\n<p><span style=\"font-weight: 400;\">Jednozna\u010dn\u011b ano. Krom\u011b toho, \u017ee obsahuje celou \u0159adu vitam\u00edn\u016f a miner\u00e1l\u016f, je to skv\u011bl\u00e9 probiotikum. Pro\u010d by n\u00e1s starost o n\u00e1\u0161 st\u0159evn\u00ed mikrobiom m\u011bla v\u0161echny zaj\u00edmat je zejm\u00e9na to, \u017ee pr\u00e1v\u011b kvalita prost\u0159ed\u00ed ve st\u0159evech ur\u010duje s\u00edlu na\u0161\u00ed imunity. V\u00edme, \u017ee kimchi m\u016f\u017ee b\u00fdt pro n\u011bkoho odrazuj\u00edc\u00ed jako velk\u00e1 nezn\u00e1m\u00e1. I proto zve\u0159ej\u0148ujeme na\u0161e vlastn\u00ed recepty a tipy, jak n\u00e1m chutn\u00e1 nejv\u00edce. Nakonec ale ka\u017ed\u00e9ho chut\u011b jsou jin\u00e9 a ka\u017ed\u00fd si m\u016f\u017ee upravit recept, jak jen chce. Nej\u010dast\u011bji n\u00e1m na\u0161i z\u00e1kazn\u00edci p\u00ed\u0161\u00ed, \u017ee je tak dobr\u00e9, \u017ee ho jed\u00ed nej\u010dast\u011bji samostatn\u00e9. Velk\u00fd hit soci\u00e1ln\u00edch s\u00edt\u00ed je te\u010f dokonce toast s hummusem a s kimchi &#8211; kombinace, kter\u00e1 je od korejsk\u00e9 tradi\u010dn\u00ed kuchyn\u011b hodn\u011b daleko.<\/span><\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong><a href=\"https:\/\/www.zivina.cz\/\">\u017dIVINA<\/a> je na sv\u011bt\u011b asi rok se v\u0161\u00edm v\u0161udy, krom\u011b kimchi a ale vyr\u00e1b\u00edte i dal\u0161\u00ed speciality.
