Anglick\u00fd n\u00e1zev, kter\u00fd v sob\u011b ukr\u00fdv\u00e1 slovo <\/b><b><i>\u010desk\u00fd <\/i><\/b><b>a <\/b><b><i>pivo. <\/i><\/b><b>P\u0159ibl\u00ed\u017e\u00edte n\u00e1m, co v\u0161echno je sou\u010d\u00e1st\u00ed konceptu?\u00a0<\/b><\/h5>\n<p><span style=\"font-weight: 400;\">Na\u0161e spole\u010dnost se zab\u00fdv\u00e1 v\u00fdrobou a prodejem zna\u010dek piva Moravia a Lucky Bastard. Na\u0161im hlavn\u00edm c\u00edlem je vyr\u00e1b\u011bt kvalitn\u00ed, zaj\u00edmav\u00e1 piva, av\u0161ak se servisem, kter\u00e9 poskytuj\u00ed hospodsk\u00fdm zejm\u00e9na v\u011bt\u0161\u00ed pivovary.<\/span><\/p>\n<h5><b>Pivovar Moravia m\u00e1 pom\u011brn\u011b zaj\u00edmavou historii. Pro\u010d jste se rozhodli o\u017eivit pr\u00e1v\u011b tuto v\u00fdrobu?\u00a0<\/b><\/h5>\n<p><span style=\"font-weight: 400;\">To vskutku m\u00e1. Pivo pod zna\u010dkou Moravia se za\u010dalo va\u0159it u\u017e na konci 19. stolet\u00ed. A samotn\u00e1 historie n\u00e1s p\u0159ivedla na my\u0161lenku znovu za\u010d\u00edt va\u0159it pivo pod touto patriotickou zna\u010dkou. Kdy\u017e jsme p\u0159ed p\u00e1r lety poprv\u00e9 roz\u0161i\u0159ovali provoz pivovaru Lucky Bastard, nast\u011bhovali jsme se do star\u00e9ho pr\u016fmyslov\u00e9ho objektu na ulici Kotl\u00e1\u0159sk\u00e9 v\u00a0Brn\u011b. Ale a\u017e po otev\u0159en\u00ed n\u00e1m kamar\u00e1d, pivovarsk\u00fd historik Filip Vr\u00e1na, osv\u011btlil historii m\u00edsta, kde se na\u0161e nov\u00e1 varna ocitla. Pouhou n\u00e1hodou jsme toti\u017e pivovar postavili v\u00a0budov\u011b b\u00fdval\u00e9 sladovny pivovaru Moravia, kter\u00fd na m\u00edst\u011b st\u00e1val do 40. let minul\u00e9ho stolet\u00ed.<\/span><\/p>\n<h5><b>Co v\u00e1s vedlo k otev\u0159en\u00ed dvou varen pod odli\u0161n\u00fdmi n\u00e1zvy &#8211; Pivovar Moravia a LUCKY BASTARD?<\/b><\/h5>\n<p><span style=\"font-weight: 400;\">Pivovar Moravia jsme zalo\u017eili p\u016fvodn\u011b jako bo\u010dn\u00ed projekt pro z\u00e1bavu bez n\u011bjak\u00e9ho komer\u010dn\u00edho z\u00e1m\u011bru. Cht\u011bli jsme si zkr\u00e1tka uva\u0159it dobr\u00fd le\u017e\u00e1k pro sebe a na\u0161e p\u0159\u00e1tel\u00e9, kdy\u017e u\u017e v\u00a0m\u00edst\u011b fungov\u00e1n\u00ed tehdej\u0161\u00ed varny Lucky Bastarda pivovar pod t\u00edmto n\u00e1zvem fungoval. Z\u00e1jem o pivo v\u0161ak rychle rostl, a tak jsme se z\u00a0p\u016fvodn\u00edho z\u00e1m\u011bru koncem roku 2017 posunuli. Spolu se vstupem nov\u00e9ho investora do spole\u010dnosti jsme se pustili do stavby podstatn\u011b v\u011bt\u0161\u00edho provozu s aktu\u00e1ln\u00ed ro\u010dn\u00ed kapacitou 10 000 hektolitr\u016f v Brn\u011b-Medl\u00e1nk\u00e1ch! Lucky Bastard je slu\u017eebn\u011b star\u0161\u00ed. Prvn\u00ed pivo n\u00e1\u0161 mal\u00fd punkov\u00fd pivovar opustilo ji\u017e na podzim roku 2013, kdy jsme se rozhodli vyzkou\u0161et si komer\u010dn\u00ed va\u0159en\u00ed piva tak, abychom zpo\u010d\u00e1tku omezili proinvestovanou \u010d\u00e1stku na rozumn\u00e9 minimum a \u2013 kdy\u017e to p\u016fjde \u2013 tak postupn\u011b v\u00fdrobu roz\u0161i\u0159ovali. Z tehdej\u0161\u00edch 300 hektolitr\u016f piva ro\u010dn\u011b jsme tak postupn\u011b vyrostli a\u017e k n\u011bjak\u00fdm cca 6000 hektolitr\u016fm, co\u017e je pl\u00e1novan\u00fd leto\u0161n\u00ed v\u00fdstav.<br \/>\n<\/span><\/p>\n<h5><b>Pivovar Moravia se chlub\u00ed le\u017e\u00e1ky, ale v LUCKY BASTARD jste se pustili i do v\u00fdroby speci\u00e1l\u016f. Dr\u017e\u00ed se va\u0161i z\u00e1kazn\u00edci sp\u00ed\u0161e \u201cklasiky\u201d nebo se odv\u00e1\u017e\u00ed vyzkou\u0161et n\u011bco nov\u00e9ho?<\/b><\/h5>\n<p><span style=\"font-weight: 400;\">Moment\u00e1ln\u011b prod\u00e1v\u00e1me o n\u011bco v\u00edce le\u017e\u00e1k\u016f zna\u010dky Moravia ne\u017e svrchn\u011b kva\u0161en\u00fdch piv (ejl\u016f) zna\u010dky Lucky Bastard, pom\u011br je asi 3:2. D\u00e1no je to typicky t\u00edm, \u017ee z\u00e1kazn\u00edci obvykle nakupuj\u00ed le\u017e\u00e1ky v pades\u00e1tilitrov\u00fdch sudech, zat\u00edmco ejly nej\u010dast\u011bji ve t\u0159icetilitrov\u00fdch sudech. Tak\u017ee na po\u010det sud\u016f je mno\u017estv\u00ed prodan\u00e9ho piva podobn\u00e9, ale li\u0161\u00edme se objemov\u011b. U lahvov\u00e9ho piva je situace opa\u010dn\u00e1, tam jasn\u011b vedou piva zna\u010dky Lucky Bastard. A speci\u00e1ln\u00ed v\u00e1rky piva obou zna\u010dek, po t\u011bch se obvykle jen zapr\u00e1\u0161\u00ed.<\/span><\/p>\n<h5><b>V \u010dem je specifick\u00fd Czech Pale Ale , kter\u00fd va\u0159\u00edte, a jak se li\u0161\u00ed od dal\u0161\u00edch Pale Ale?\u00a0<\/b><\/h5>\n<p><span style=\"font-weight: 400;\">V\u00a0p\u0159\u00edpad\u011b na\u0161eho Czech Pale Ale je rozd\u00edl v\u00a0pou\u017eit\u00e9m chmelu. Jeden\u00e1ctka Lucky Bastard Blond, kterou pod t\u00edmto stylem nab\u00edz\u00edme, toti\u017e obsahuje i mno\u017estv\u00ed \u010desk\u00e9ho aromatick\u00e9ho chmelu Kazbek s\u00a0citrusov\u00fdm profilem. Jak se li\u0161\u00ed American Pale Ale v\u016f\u010di India Pale Ale? V modern\u00edm pojet\u00ed \u0159emesln\u00e9ho piva se bav\u00edme ji\u017e jen o drobn\u00fdch rozd\u00edlech dan\u00fdch silou a intenzitou ho\u0159kosti, nicm\u00e9n\u011b obecn\u011b se d\u00e1 \u0159\u00edci, \u017ee jako India Pale Ale se dnes ozna\u010duj\u00ed siln\u011bj\u0161\u00ed, v\u00edce chmelen\u00e9 verze American Pale Ale.<\/span><\/p>\n<h5><b>Tak\u00e9 \u010dasto zmi\u0148ujete, \u017ee jsou va\u0161e piva \u0159emesln\u00e1. Co p\u0159esn\u011b to p\u0159i v\u00fdrob\u011b piva znamen\u00e1?\u00a0<\/b><\/h5>\n<p><span style=\"font-weight: 400;\">Slovo \u201e\u0159emesln\u00fd\u201c se v\u00a0dne\u0161n\u00ed dob\u011b dost zneu\u017e\u00edv\u00e1, a to i v\u00a0p\u0159\u00edpadech, kter\u00e9 maj\u00ed s\u00a0\u0159emeslem pram\u00e1lo spole\u010dn\u00e9ho. Z\u00a0na\u0161eho pohledu nejde o velikost provozu nebo to, zda sl\u00e1dek m\u00edch\u00e1 d\u00edlo va\u0159e\u010dkou nebo to za n\u011bj d\u011bl\u00e1 m\u00edchadlo. Ale zejm\u00e9na o to, jak\u00fdm zp\u016fsobem v\u00fdrobce se surovinami pracuje, jak postupuje p\u0159i v\u00fdrob\u011b a taky jak\u00e9 suroviny do sv\u00e9ho piva zvol\u00ed. V\u00a0dne\u0161n\u00ed dob\u011b se za craft, neboli \u0159emesln\u00e9, pivovary ozna\u010duj\u00ed i mezin\u00e1rodn\u00ed kolosy, u kter\u00fdch o \u0159emeslnosti opravdu hovo\u0159it nelze a cel\u00e1 argumentace stoj\u00ed na tvrzen\u00ed, \u017ee v\u00fdznam slova \u201ecraft\u201c nen\u00ed nikde v\u00a0z\u00e1kon\u011b zakotven, tak si ozna\u010den\u00ed m\u016f\u017ee nalepit ka\u017ed\u00fd, na co chce.\u00a0<\/span><span style=\"font-weight: 400;\">Konkr\u00e9tn\u011b u piva se vyh\u00fdb\u00e1me pou\u017eit\u00ed jin\u00fdch ne\u017e z\u00e1kladn\u00edch surovin (voda, slad, chmel). Na varn\u011b je sice cel\u00fd proces o p\u00e1r des\u00edtek minut krat\u0161\u00ed, nicm\u00e9n\u011b ve sklep\u011b si to sl\u00e1dek bohat\u011b vynahrad\u00ed p\u00e9\u010d\u00ed o pivo. Proces se je\u0161t\u011b d\u00e1le komplikuje, pokud do n\u011bj nap\u0159\u00edklad zapoj\u00edme moravsk\u00fd ovocn\u00fd mo\u0161t, kter\u00fd pou\u017e\u00edv\u00e1me v na\u0161ich speci\u00e1ln\u00edch v\u00e1rk\u00e1ch ovocn\u00fdch piv \u0159ady Pussy (pozn. red.: Cherrypussy, Pearpussy, atd.). \u0160\u0165\u00e1vu do piva nesta\u010d\u00ed jen nal\u00edt. Tedy pokud takov\u00e1 je a nen\u00ed to tajemstv\u00ed.<\/b><\/h5>\n<p><span style=\"font-weight: 400;\">Mimo ovocn\u00fdch \u0161\u0165\u00e1v je pro n\u00e1s mal\u00fd sv\u00e1tek, kdy\u017e m\u016f\u017eeme pou\u017e\u00edt sice surovinu naprosto z\u00e1kladn\u00ed, ale v\u00a0\u010derstv\u00e9 podob\u011b. Konkr\u00e9tn\u011b hovo\u0159\u00edm o Akciov\u00e9m le\u017e\u00e1ku, kter\u00fd jsme letos nava\u0159ili z\u00a0\u010derstv\u00e9ho zelen\u00e9ho chmele, kter\u00fd n\u00e1m dovezl kamar\u00e1d, vedouc\u00ed \u0161lecht\u011bn\u00ed chmele z\u00a0Chmela\u0159sk\u00e9ho institutu v\u00a0\u017datci. A aby to bylo zaj\u00edmav\u011bj\u0161\u00ed, tak \u0161lo o historick\u00e9 klony chmele, kter\u00e9 sv\u00fdmi ko\u0159eny sahaj\u00ed do obdob\u00ed Prvn\u00ed republiky, kdy byl p\u016fvodn\u00ed pivovar Moravia na vrcholu.<\/span><\/p>\n<h5><b>Kde \u010derp\u00e1te inspiraci?<\/b><\/h5>\n<p><span style=\"font-weight: 400;\">Zdroj\u016f je mnoho. \u010casto s\u00a0po\u017eadavkem nebo my\u0161lenou p\u0159ijde obchod a pak je to sp\u00ed\u0161e o tom vymyslet, kterak se k\u00a0c\u00edli dobrat a jak vhodn\u011b nakombinovat suroviny. M\u016f\u017ee v\u0161ak j\u00edt i o podn\u011bt kamar\u00e1da u piva \u010di n\u00e1pad z\u00e1kazn\u00edka, kter\u00fd t\u0159eba disponuje n\u011bjakou netradi\u010dn\u00ed surovinou a r\u00e1d by ji vid\u011bl v\u00a0pivu. Prostoru na trhu je st\u00e1le dost, jde jen o to m\u00edt kvalitn\u00ed a zaj\u00edmav\u00e1 piva a dobr\u00fd koncept. Studovat m\u016f\u017eete na odborn\u00e9m u\u010dili\u0161ti, st\u0159edn\u00ed nebo vysok\u00e9 \u0161kole \u010di absolvovat rekvalifika\u010dn\u00ed kurz. Jeden takov\u00fd prob\u00edh\u00e1 i ve spolupr\u00e1ci s pivovarem Moravia a Mendelovou univerzitou, \u010dlov\u011bk tak po p\u016flro\u010dn\u00edm studiu a ro\u010dn\u00ed praxi z\u00edsk\u00e1 kvalifikaci na pozici sl\u00e1dka. Takt\u00e9\u017e se d\u00e1 vzd\u011bl\u00e1n\u00ed \u00fapln\u011b pominout, pokud absolvujte \u0161estiletou praxi v\u00a0pivovaru.\u00a0<\/span><span style=\"font-weight: 400;\">J\u00e1 jsem zvolil cestu d\u00e1lkov\u00e9ho studia na potravin\u00e1\u0159sk\u00e9 st\u0159edn\u00ed \u0161kole v\u00a0Praze. Jeliko\u017e jsem p\u0159ed t\u00edm ji\u017e vystudoval vysokou \u0161kolu v\u00a0jin\u00e9m oboru, tak m\u00e1m dv\u011b maturitn\u00ed zkou\u0161ky.<\/span><\/p>\n<h5><b>Zaznamenali jste vy\u0161\u0161\u00ed n\u00e1r\u016fst objedn\u00e1vek b\u011bhem pandemie?<\/b><\/h5>\n<p><span style=\"font-weight: 400;\">To je dost t\u011b\u017ek\u00e9 hodnotit vzhledem k\u00a0tomu, \u017ee k\u00a0rozjet\u00ed na\u0161eho e-shopu <a href=\"http:\/\/www.zitpivo.cz\">zitpivo.cz<\/a>, a tedy zas\u00edl\u00e1n\u00ed piva p\u0159epravn\u00edmi slu\u017ebami, n\u00e1s donutila a\u017e samotn\u00e1 korona. Dlouho jsme o n\u011bm uva\u017eovali, ale v\u017edy byl a\u017e na jednom z posledn\u00edch m\u00edst na\u0161ich online priorit, proto\u017ee klasick\u00e1 distribuce p\u0159es distributory a e-shopy t\u0159et\u00edch stran fungovala velmi dob\u0159e. Nicm\u00e9n\u011b kdy\u017e pivovar ze dne na den p\u0159ijde o 80 % odbytu (sudov\u00e9 pivo), nelze p\u0159e\u0161lapovat na m\u00edst\u011b a \u010dekat, \u017ee v\u00e1s n\u011bkdo zachr\u00e1n\u00ed. B\u011bhem t\u00fddne jsme tedy dali dohromady e-shop, naplnili jej lahvemi a pak u\u017e to byl fofr. Pokud bych srovn\u00e1val se sou\u010dasn\u00fdm stavem, tak po dobu zav\u0159en\u00fdch hospod jsme tr\u017eby z eshopu m\u011bli asi p\u011btin\u00e1sobn\u00e9. Na\u0161t\u011bst\u00ed se v\u0161e vr\u00e1tilo relativn\u011b do norm\u00e1lu a majorita piva z pivovaru op\u011bt odch\u00e1z\u00ed v sudech. Nicm\u00e9n\u011b i tak n\u00e1m eshop d\u011bl\u00e1 radost, je to v\u00edtan\u00fd dopln\u011bk a cesta, jak nab\u00eddnout pivo z\u00e1kazn\u00edk\u016fm i mimo na\u0161i standardn\u00ed distribu\u010dn\u00ed s\u00ed\u0165.<\/span><\/p>\n<h5><b>Z e-shopu pos\u00edl\u00e1te piva z\u00e1kazn\u00edk\u016fm p\u0159\u00edmo dom\u016f.
